The short answer
In Maharashtra, restaurant POS needs vary sharply by format. Bars and permit rooms need separate billing for liquor (taxed by the state, outside GST) and food (under GST). Mumbai's high-volume joints need extreme counter speed. Pune's cafés need modifiers, QR menus and loyalty. Delivery-heavy kitchens need aggregator integration. Chains need multi-outlet control. Pick the format first, then the POS.
Maharashtra is one of India's largest restaurant markets. NRAI's India Food Services Report 2024 estimated Mumbai's food services industry alone at about ₹55,181 crore (Curly Tales). The variety is the point: a vada pav stall in Dadar, an Irani café in Fort, a Koregaon Park café and a Nagpur family restaurant aren't buying the same software.
Maharashtra's restaurant formats
Bars, permit rooms and restaurants serving alcohol
This is the most Maharashtra-specific point in this guide. Alcoholic liquor for human consumption is outside GST and is taxed by the state. Food served in the same restaurant is under GST. So a single table's bill may involve two tax treatments.
What the POS must do: separate liquor and food items into different tax categories, print them correctly, and report them separately for your accountant. Ask every vendor to show a mixed food-and-liquor bill. If Ecomeal isn't set up the way your bar billing needs, we'll tell you in the demo.
Get your CA involved
Liquor billing, licensing and reporting have state-specific rules. Your POS should follow your CA's set-up; don't let a vendor's default settings decide your tax treatment.
Mumbai's high-volume counters
Udupi restaurants, Irani cafés, vada pav and pav bhaji counters, and office-area lunch spots run on speed and volume. Short menus, cash and UPI, and enormous lunch peaks. Billing must be instant, and the day-end must be clean.
The Mumbai standard
If a Mumbai lunch-hour guest waits 40 seconds for a bill, they'll have finished their vada pav, caught the 1:12 fast and texted their review from Andheri. Time your POS demo with a stopwatch.
Pune's café and casual-dining scene
Pune's student and IT populations sustain a large café and casual-dining scene. These restaurants need modifiers, QR menus that match the POS, loyalty for regulars and help selling food alongside drinks. Ecomeal's one menu for POS and QR, loyalty tiers and AI Up Sell daily deals suit this format well. See our café billing checklist.
Delivery-dense kitchens
Mumbai and Pune have dense delivery markets. If aggregators drive your orders, integration and reconciliation decide the POS. Read our cloud kitchen POS guide. Ecomeal's Swiggy and Zomato integration isn't live yet.
Multi-outlet brands
Maharashtra has many regional chains spread across Mumbai, Thane, Navi Mumbai and Pune. Outlet complexity means central menus, outlet comparisons and permissions. Ecomeal's Multi-Outlet view shows revenue, orders and status for every outlet together, plus open/close history. See our multi-outlet guide.
Festival and seasonal patterns
Ganeshotsav, Navratri, Diwali and the monsoon all reshape demand in Maharashtra. Monsoon usually shifts orders toward delivery and comfort food; festival weeks can bring both surges and closures depending on location. A POS that shows sales by time of day and day of week helps you plan staff and prep. Ecomeal's dashboard compares today with the same time yesterday and shows peak hours and daypart revenue.

GST basics
Restaurant GST rules are national: most standalone restaurants charge 5% without ITC, restaurants in hotels with room tariffs above ₹7,500 charge 18% with ITC, and aggregators pay GST on food ordered through them under Section 9(5) (TAXAJ). Service charge can't be added by default. Liquor, as above, sits outside GST.
